For your cooking and eating pleasure, we have placed four of our favorite apple and peach recipes on this page.

MOM-MOM’S APPLE CRISP

  1. Peel, core, and cut up 8-10 large apples. Place in bottom of 11×17 or 13×9 baking pan.
  2. Sprinkle apples and toss with:
    • 1/4 cup sugar
    • 1 tsp. cinnamon
    • 1 tbsp. lemon juice.
  3. Mix into crumble and sprinkle on apples:
    • 1/3 cup melted butter or margarine
    • 1/3 cup flour
    • 1 cup quick oats
    • 1/2 cup light brown sugar
  4. Bake at 350° for 30-45 min., until soft and bubbly.

MRS. JENKINS’ FRESH APPLE SQUARES

  • 1 3/4 cups sugar
  • 3 eggs
  • 1 cup oil
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 cup chopped nuts (optional)
  • 2 cups pared apples
  1. Beat sugar eggs, and oil until blended.
  2. Stir in dry ingredients and fold in apples and nuts.
  3. Pour into 13×9 pan and bake at 350° for approx. 60 minutes.
  4. Cool and dust with confectioner’s sugar.

MOM’S EASY PEACH COBBLER

  1. Peel and cut up enough peaches to cover the bottom of an 8×8 to 9×13 baking pan.
  2. Sprinkle peaches with cinnamon.
  3. Mix in a bowl with fork or fingers until crumbly:
    • 1-2 cups flour
    • 1/2-1 cup softened butter or margarine.
    • 1/2-1 cup sugar
    • (use more if you like a lot of crumb)
  4. Put crumb mixture over peaches and cinnamon.
  5. Bake at 375° for about 45 min., or until bubbly.

PEACH MUFFINS

  • 1 egg
  • 1 cup milk
  • 1/2 cup melted
    shortening
  • 2/3 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. lemon juice
  • 1/4 tsp. cinnamon
  • 1/4 tsp. vanilla
  • 2 cups flour
  • 3 tsp. baking powder
  • 1 cup diced fresh peaches
  1. Mix all ingredients with nice ripe peaches.
  2. Bake at 350° for 15-20 min. until lightly golden. Makes about 18 muffins.
